I found a recipe yesterday in a 1923 Canadian cook book, I love this cookbook as it's ALL simple. Holy cow, humans complicate everything... and waste a lot of food. This orange cake caught my attention because it states to chop (in a chopper/blender) an orange - peel and all! Peel & all!? For someone who has physical pain from peeling an orange - YAY! So I decided to try it! OMG.. I kid you not, it's all gone, I'm baking another one today & it was the easiest TASTIEST orange cake I've ever had. Guest worthy, Gift Worthy! Here it is & below - the adjustments I made.
I didn't have regular oranges - I used 2 clementines oranges, just took out the tiny stem nub' and thew them in the chopper.
I also used Cranberry raisins and I prefer the tartness to them & cranberries are good for you. And as for 'sour milk'.. the milk was not sour and I din't bother making it sour - I used regular mink. Today I think I'll also make the orange icing.. - it appears simple enough - the cake is delicious on it's own though if you don't want to sweeten it up.
